Mini Carrot Cakes with Cream Cheese Frosting (High Protein & Gluten-Free)

All the indulgence of traditional carrot cake, made with better ingredients, extra protein, and perfectly sized for two.

Carrot cake has always been one of Laith's favorite desserts. While it isn't necessarily my first choice, we both enjoy a generous slice of the real thing once a year or whenever we visit one of our favorite restaurants, The Palm in Orlando.

And if you've ever ordered dessert at a nice steakhouse, you know it isn't unusual to spend $15–$20 on a single slice of cake!

There's absolutely nothing wrong with enjoying that occasional indulgence. But sometimes you want something just as satisfying without the restaurant-sized portion, the added sugar, or the price tag.

That's where these little carrot cakes come in.

They're incredibly moist, perfectly sweet, and filled with those wonderful warm spices that make carrot cake so comforting. Each one is finished with a generous layer of creamy, full-fat cream cheese frosting and crunchy toasted walnuts.

And here's something you might not expect: the cake batter contains cottage cheese!

Before you raise an eyebrow, I promise you won't taste it. Once blended, the cottage cheese completely disappears into the batter, helping create a tender, moist cake while adding a little extra protein.

Laith gave these his enthusiastic approval, and considering how much he loves traditional carrot cake, that's saying something!

What I particularly love about this recipe is the portion size. It makes just two individual cakes, perfect for couples, empty nesters, or anyone who wants a homemade dessert without an entire cake sitting on the kitchen counter.

They're also gluten-free when made with gluten-free oats, sweetened with allulose instead of added sugar, and surprisingly easy to prepare.

Because eating well doesn't have to mean giving up the foods you love. Sometimes it simply means finding a different way to enjoy them.

Ingredients

Yield: 2 individual cakes

Prep time: 15 minutes

Bake time: 25–32 minutes

Instructions

1. Preheat the Oven

Preheat your oven to 350°F. Lightly grease two 6-ounce oven-safe ramekins with butter and place them on a baking sheet.

2. Prepare the Carrots, Oats & Walnuts

Finely grate the fresh carrots and measure ½ cup, lightly packed.

If using rolled oats, blend them into a fine flour.

Toast the chopped walnuts in a dry skillet over medium-low heat for approximately 3–5 minutes, stirring frequently until fragrant. Set aside to cool.

3. Blend the Wet Ingredients

Add the cottage cheese, egg, allulose blend, and vanilla extract to a blender.

Blend for approximately 15–20 seconds, or until completely smooth.

Add the melted, slightly cooled butter and pulse briefly to combine.

4. Combine the Dry Ingredients

In a separate mixing bowl, whisk together the almond flour, oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

5. Make the Batter

Pour the blended cottage cheese mixture into the dry ingredients.

Stir gently until just combined, being careful not to overmix.

Fold in the grated carrots and toasted walnuts.

6. Bake

Divide the batter evenly between the prepared ramekins, leaving a little room for the cakes to rise. If necessary, use a third ramekin rather than overfilling.

Bake for approximately 25–32 minutes, checking for doneness around 22 minutes.

The cakes are ready when the centers are set and a toothpick inserted into the middle comes out with a few moist crumbs but no wet batter.

7. Cool Completely

Allow the cakes to cool before removing them from the ramekins or adding frosting.

8. Prepare the Cream Cheese Frosting

Beat the softened cream cheese until smooth.

Add the Greek yogurt, powdered allulose blend, vanilla extract, and salt. Mix until creamy and well combined. For a firmer frosting, refrigerate briefly before spreading.

9. Frost & Enjoy

Spread the cream cheese frosting generously over the cooled cakes.

Finish with additional chopped toasted walnuts and enjoy!

Smarter Tips

  • Blend the cottage cheese thoroughly: This creates a smooth batter with no noticeable cottage cheese texture or flavor.

  • Freshly grated carrots work best: Finely grated carrots distribute moisture evenly and give the cakes their classic texture.

  • Don't overmix: Gently combining the wet and dry ingredients helps maintain a tender crumb.

  • Toast those walnuts: A few minutes in a dry skillet brings out their natural flavor and adds a delicious crunch.

  • Make it gluten-free: Use certified gluten-free oats and verify that your other packaged ingredients are gluten-free.

  • Double the recipe: Making dessert for four? Simply double the ingredients and divide among four appropriately sized ramekins. Baking time may vary.
