Crunchy, buttery caramel popcorn with roasted peanuts—made from scratch with simple ingredients and no corn syrup!

Remember Cracker Jack? Growing up, I loved that irresistible combination of sweet, crunchy caramel popcorn and salty peanuts. And, of course, there was always the promise of a prize! I remember digging through the box after eating a few handfuls, eager to discover what little treasure was waiting inside.

These days, I'd rather skip some of the ingredients in the store-bought version, but I still love the occasional trip down memory lane. Making this nostalgic treat at home is surprisingly easy, rewarding, and gives me the freedom to choose the ingredients.

Here in the Wellness Lifestyle Kitchen, we believe there's room for intentional indulgence. Sometimes that means choosing real sugar because it's simply the best ingredient for the job. In this recipe, brown sugar creates that rich caramel coating and satisfying crunch that sugar alternatives don't always deliver.

This small-batch caramel popcorn is a perfect example of enjoying an occasional treat in its best form, without guilt or unnecessary compromises. Because eating well isn't about perfection, it's about making intentional choices that work for your lifestyle.

Instructions

  1. Preheat the oven. Set your oven to 250°F and line a baking sheet with parchment paper.

  2. Prepare the popcorn. Pop the kernels using your preferred method. Measure approximately 3–4 cups of popped popcorn, removing any unpopped kernels. Place in a large mixing bowl.

  3. Make the caramel. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and bring to a steady boil. Cook for approximately 3 minutes, stirring and scraping the bottom of the pan.

  4. Finish the caramel. Remove the saucepan from the heat. Stir in the vanilla, salt, and baking soda. The mixture will foam slightly.

  5. Coat the popcorn. Immediately pour the caramel over the popcorn. Add the peanuts and toss until evenly coated. Spread the mixture onto the prepared baking sheet.

  6. Bake until crunchy. Bake for 45–60 minutes, turning the popcorn every 15 minutes to distribute the caramel. Toward the end of baking, remove a piece and allow it to cool before testing for crispness.

  7. Cool and enjoy. Let the popcorn cool completely on the baking sheet. Break apart any large clusters and enjoy!

Maria's Kitchen Notes

The secret to the crunch: Don't skip the low-temperature baking step. It helps dry and crisp the caramel coating. Remember to test a cooled piece, since hot caramel will still feel soft. If it's ready at 45 min, you can stop baking.

Popcorn matters: I prefer organic non-GMO popcorn kernels and pop them fresh for this recipe.

Storage: Once completely cooled, store in an airtight container at room temperature to preserve the crunch.

Make it an ice cream topping: This caramel popcorn also makes a delicious addition to homemade ice cream or a Ninja Creami. Add it just before serving so it stays crunchy.
